Wild Rice Casserole

5 lb chicken breast; cooked and shredded (boiling is great)
6 3/4 oz quick cooking wild rice
4 medium onions
1 lb sausage
4 cans cream of mushroom soup
4-5 slices of bread; chopped roughly into bread crumbs
3 Tbl butter, melted

Cook rice in chicken broth
Cook sausage according to package; drain and crumble
Saute onions in sausage pan
Add soup to onions; add sausage
Grease 2 9x13 casserole dishes
Divide sausage mixture in half; add to greased dishes
Divide chicken in half, add to the top of the sausage mix
Divide rice in half, layer on top of chicken
Sprinkle bread crumbs on top of rice
Drizzle butter over crumbs

Cover with foil; bake 30 minutes at 350. For crispy topping, uncover for the last 10 minutes.

This is my FAVORITE dish that my mom makes. Terrific for large groups, or to make one and freeze one for later. Also great when you need a dish to take to a friend!
